Pasta Pasta Pasta!

This week's recipe is from one of my favorite Italian chefs, Lidia Bastianich! I have cooked so many of her recipes through the years and of course, I wanted to blog about my experience with one of her pasta recipes. 

This tomato-based rigatoni dish is perfection. With its deep blend of flavors from the sausage, the basil, and cheese, the zucchini and peperoncino flakes complete its magic in the pasta, giving it texture and an extra kick.

Rigatoni with Sausage-Tomato Sauce

Serves 8

Ingredients

1 1/2 pounds sweet Italian sausage
1 cup white wine, divided
2 tablespoons extra-virgin olive oil, plus more for finishing the sauce
2 cups onions, chopped
1 garlic clove, peeled and sliced
1/2 teaspoon kosher salt, plus more for the pasta pot
1/2 teaspoon peperoncino flakes, or to taste
1 cup zucchini, diced
6 cups canned Italian plum tomatoes, preferably San Marzano, crushed by hand
1 branch fresh basil, with lots of leaves
1 pound rigatoni
1 cup Grana Padano, freshly grated, plus more for passing
 

Preparation

Remove the sausage casings, and crumble the meat into a large bowl. Pour 1/2 cup of the wine over the meat and mix this in with your fingers, breaking up any big meat clumps, so the sausage is evenly moistened.

Pour the olive oil into the big skillet and set it over medium heat. Stir in the onions and cook until they begin to soften, about 5 minutes. Scatter the sliced garlic in the pan and season with the salt and peperoncino. When everything is sizzling, crumble in the sausage and stir with the onions. Pour in the remaining 1/2 cup wine, raise the heat a bit and cook, stirring, as the wine cooks away and the sausage becomes all browned, about 10 minutes. Add in the diced zucchini and stir to incorporate. Pour in the tomatoes and a cup of water (which you’ve used to slosh and rinse the tomato cans and bowl). Submerge the basil branch in the liquid, cover the skillet and bring to a boil. Set the cover ajar, adjust the heat to keep the sauce bubbling steadily and cook for an hour or more, until the sauce has developed good flavor and reduced to the consistency you like for dressing pasta. Remove and discard basil branch. You can use some of the sauce right away—you’ll need half of it to dress the rigatoni—or let it cool, then refrigerate or freeze for later use.

For cooking and dressing the pasta, bring a large pot of well-salted water (at least 7 quarts water with 1 1/2 tablespoons kosher salt) to a rolling boil. Heat half the sausage-tomato sauce, about 4 cups, to a bare simmer in a wide skillet or sauté pan (if you’ve just made the sauce, use the same pan). If the sauce has cooled and thickened, loosen it with some of the pasta water. Add the rigatoni to the boiling water, and cook until just al dente.

Lift out the pasta in big bunches with a spider, let drain for a moment, then spill them into the simmering sauce. Over low heat, toss the rigatoni and sauce together for a minute or two, until all are coated and perfectly al dente. (Thin the sauce, if necessary, with hot pasta water or thicken it quickly over higher heat.) Turn off the heat, and sprinkle the grated cheese over the rigatoni and toss well. Finish with a drizzle of olive oil, toss again and heap the pasta in warm bowls. Serve immediately, passing more cheese at the table.

I love this recipe because it's quick and easy, and it's the ideal comfort food. Trust me when I say this, this pasta is really super delicious! I was salivating while shooting the photos- I couldn't stand to wait and eat it! Don't forget the wine and bread! I know some of you will think I'm bonkers for having bread with pasta, but I grew up eating like this and I love it. So extra yummy when you dip it in the sauce! ;P

The only kind of music I can actually concentrate to while writing is and has always been classical music. I'm a lover of all things instrumental, but was quickly drawn into the classical music realm when I was a young teenager. Truthfully, I'm kind of a geek about it. I still, as a hobby, collect CD's but only in this genre. I could care less about the digital crap when it comes to looking for treasure. There's something rare in its form when you by happenstance come across gems all over the city. I use to go crazy at the Virgin Megastore while it was still around in Union Square. My husband and I would go every weekend, and go our separate ways; him with his movies and me with my music.

I've got a stack of reasons not only to enjoy classical music, but to appreciate it. Classical music has been shown to lower stress, make people smarter (!), and can even be a lovely sleeping aid. A 2001 study out of Southern Methodist University supports that listening to classical music heightened the emotions in the study subjects. They were more expressive and effusive with their comments, and they were more openly available as well.

It's probably, in my opinion, one the best discussions I've ever listened to regarding classical music. It is truly significant. And it is special.

I didn't want to list the obvious! Of course I worship Mozart, Beethoven, Bach and others but like I said, the amount is endless. If you're anything like the pianist loving freak that I am, you'll love Mitsuko Uchida (I've seen her play live at Carnegie Hall and it was completely amazing) and Dong Hyek Lim.

The pages upon pages of sonatas, concertos, you name it, that I've kept with me through the years, is what I go back to when I'm looking for a certain tone to work with into my writing. When it comes to writing, I always use a computer for manuscripts but I do enjoy using my Olympia typewriter for poetry and short stories.

It even comes with its own case, so it's portable but it's too bulky for me to carry around. Hence, the digital computers. I use Macs and also have a Microsoft Surface Pro 3. I've always wanted to use the typewriter to complete a screenplay. Though when I do type, I make far too many errors, it could get technically frustrating. But regardless of what I just said, isn't she an aesthetic beauty? With a name like Olympia, how can she not be female? ;)

Lastly, today is World Suicide Prevention Day, and I wanted to leave you a quote in relation to this ever-growing dilemma. Let's all take some time today to become more aware of what we can do to help the ones we love who are going through this. Sometimes all it takes is a person to listen. Your story isn't over yet. You're worth another chapter.

Wild Child!

I live for words. But sometimes, being a writer, it's hard to find the right ones. In the exact correct place. In a particular moment. Sometimes, it's other mediums, like music, photography, and other art forms that help express those inner primal emotions.

When the words don't come, I go out and live my life. But even then, sometimes life wants to hand you the shittiest of lemons in the shittiest of circumstances, and even though I could produce an interesting concoction of what would maybe qualify as lemonade, I'd rather sing my heart out first. I always feel so much better after a sesh alone, therapeutic even. At least to me it is. I can kick it to any melody, but just like my father, the blues and more especially, rock n roll is in my soul. 

I find self-portraiture to be a journey of not only exploring and discovering many different characteristics in a person, but also the best way to get the creative juices flowing and hopefully for someone to get better at their work. Since I've never done a photo shoot such as one which includes my *obvious* talent for singing, I wanted to share with you my many different expressions of moods and emotions. All I can say is it was a blast!

I re-created a playlist I had going on during this self-portrait session. Though it's mostly rock n roll, I've got some alternative, post-punk and blues in there too. Check it out below!

Favorite Hair Products of All Time

In my last favorites, I chatted about some of my most favorite spices of all time. Today, I wanted to share with you all my essentials when it comes to that big mane on top of my head. It is minimal, but when it comes to my hair, I have a few ground rules.

  • Don't wash your hair every single day! It rids of all nutrients and oils you need to make your hair look fabulous! I actually will wash my hair every few days and will only give it one deep condition in, once per week for 30 minutes. Is your hair extra oily? Dry some dry shampoo in between washes.
  • Do NOT- I REPEAT, DO NOT use shampoos that carry sulfate! This stuff ruins any amazing dye job, and will also dull out your beautiful natural hair color! I use Alfaparf Milano Shampoo & their nutritive mask for my weekly conditioning. It is specifically for drier/coarser hair like mine, with thorough moisturizing.
  • I don't like to blow dry my air. One I literally have too much hair to blow-dry, and two, I sweat like a pig while doing it! I only usually do this during the winter when air drying my hair would take days. (I'm not kidding) I use two different irons when it comes to doing my hair. For curling, I use Conair's Double Ceramic Curling Iron, 1 1/4 inches. For straightening, since my hair is not naturally straight (see below) I use Hot Tools 1.5" Tourmaline Ceramic Titanium Flat Iron
  • I HATE hairspray. Ever since my figure skating days, I've been avoiding it like the plague. It's sticky (even when the bottle says it's not), you smell like some fumigated bug and it never ever holds my texture in place! Because of the thickness of my hair, I use Kiehl's Creative Cream Wax to hold curls or waves in place. Not only is Kiehl's one of my favorite NYC stores, I love how many of their products can be used for both men and women. My hubby will use the wax from time to time! ;) My favorite spray of all time is NYM's Sea Salt Spray. Your hair will not only smell like you just came from the beach, but your hair will look perfectly textured from the sea salt! Win!

You keep saying, you got something for me...

TGIF! I'm really looking forward to the long holiday weekend. Even more so, I'm ready to break these pretty ladies in! Since last year, I've been really wanting a pair of peep-toe booties but something more on the neutral side; something I can wear day and night, keeping my style versatile. These chic Steve Madden booties are amazing! I got them from ASOS :)

Though I may be short, I'm not the type of girl who likes to run around in 5'' heels. I love how these are lower heels and are actually extremely comfortable!

For nail polish, I picked a darker blue hue to accentuate the soft colored shoes. It's Essie and the color is 'No More Film'. One of my favorite colors I use for Fall and Winter seasons. And can I just talk about the slingback part of the shoe? So much fun!
